Spinach and Gruyere Cheese Quiche with a Hash Brown Crust

Image
Spinach and Gruyere Cheese Quiche with a Hash Brown Crust Eggs, spinach, onions and peppers and nutty glorious Gruyere cheese all nestled in a hash brown crust. What’s not to like? There is no need to feel guilty slicing into this no matter how beautiful it is. I used 6 egg whites and 4 eggs to cut down on the cholesterol which let me add some cheese into this. If I had used all eggs I would have omitted the cheese but Gruyere cheese pairs perfectly with spinach and I really wanted it in this quiche. It’s fairly simple to make this crust too. First, grab yourself a springform pan. Pour a tiny bit of oil and brush is around and then line it with parchment paper and grease the top of the paper too. 2. Next you want to get all those glorious hashbrowns partially cooked through so they are crispy and not soggy. Tip! You can use real potatoes or frozen hash browns for the crust. Either way, you’ll want to make sure they are completely thawed and then s-q-u-e-e-z-e out any moisture th...

CHICKEN AND AVOCADO TACOS WITH CREAMY CILANTRO SAUCE

Image
CHICKEN AND AVOCADO TACOS WITH CREAMY CILANTRO SAUCE Spicy pan grilled chicken and avocado tacos topped with a creamy cilantro lime sauce. These tasty tacos are bursting with flavor and are made in under 30 minutes! Take tacos to a whole new level with the addition of avocado and my favorite cilantro cream sauce. If you’ve had my popular shrimp tacos, then you’re going to love this chicken version. The chicken and avocado make a delicious pair and complement each other perfectly. The real star of the dish is this flavor-packed cilantro lime sauce. It’s creamy, zesty and makes a delicious addition to the chicken and avocado. The chicken is seasoned with taco seasoning and garlic. You can use it right after seasoning it or marinate it in the fridge for up to 48 hours. Once you’re ready to cook the chicken, simply cook it on the stove-top in a few teaspoons of oil. And because the chicken is cut into small bite size pieces, it will absorb all the flavor and chicken will cook in under 15 m...

NUTELLA-SWIRLED BANANA MUFFINS

Image
NUTELLA-SWIRLED BANANA MUFFINS Any recipe that uses up too-ripe bananas is a winner, amiright? I always buy bananas with the intent to eat one a day because I know that’s what I’m supposed to do, but most of the time they just sit on the counter until they are waaaay past ripe and bordering on fruit-fly stage… Gross. Sorry. I always have a ton of bananas in the freezer because honestly, I like what they produce way better than fresh bananas because it’s almost always some form of BAKED GOODS! These muffins are perfectly moist and full of banana flavor. More importantly, there are excessive quantities of Nutella swirled throughout the already almost-perfect muffins. Nutella is a smooth chocolate and hazelnut spread that will quickly replace the spoonful of peanut butter that I know we all indulge in from time to time if you let it. And you should. Did I really have to explain what Nutella is?! I trust that you, my friends, know exactly what Nutella is and how glorious chocolate ...

Image
CHICKEN PASTA WITH BACON AND SPINACH IN CREAMY TOMATO SAUCE This chicken pasta with spinach and bacon in creamy tomato sauce is simply amazing with Parmesan cheese! The DELICIOUS creamy sauce permeates every single bite of this chicken penne dish. It’s as though all the ingredients here were made for each other. Very flavorful and creamy! WHAT KIND OF CHICKEN TO USE IN CHICKEN AND BACON PASTA A few tips about which chicken to use in this chicken bacon spinach pasta. When you shop for chicken, the one that works best is without any added water. But if it’s the kind that has added water (and usually added sodium too) – make sure all water/broth is drained after cooking the chicken. Otherwise the recipe will turn out watery and will need to be thickened by additional cheese or flour. SUBSTITUTIONS THAT WILL WORK IN THIS RECIPE This chicken bacon spinach pasta recipe is very flexible with substitutions. If you don’t like messing around with fresh tomatoes, you can replace them with a can o...

Black Bean Tacos with Avocado Cilantro Lime Crema

Image
Black Bean Tacos with Avocado Cilantro Lime Crema I know what most of you are probably thinking. Black bean tacos. BORING! My family was thinking the same thing until I made them these seriously delicious Black Bean Tacos with Avocado Cilantro Lime Crema. This is how you do black bean tacos! These are so easy to make, all you need to do is simmer the beans with some salsa along with a couple of Mexican spices for 5 minutes. While those are simmering, in a food processor you’ll combine the ingredients for that delicious avocado sauce and also warm up your tortillas. Then serve them along with the classic (American) taco toppings (I think the lettuce, tomatoes and cheese are a must then add a little Mexican hot sauce then add other veggies like corn or sauteed bell peppers if you’d like). And boom dinners ready! This is one of those easy dinners (about 25 minutes after chopping toppings and everything) that everyone will love! Like I said my kids were disappointed when I told them we wer...

I love breakfast foods, of all kinds! Perfectly seasoned and roasted red-skin potatoes topped with caramelized onions, crispy bacon and fresh herbs. The perfect side dish for breakfast! Usually I prefer hashbrown potatoes, due to some “home fries” not being cooked all the way through (I’m picky about my potatoes lol)… but these are the perfect combination of crispy on the outside and fluffy and soft on the inside. Not to mention the fantastic seasonings on these potatoes. Smoked paprika is the star of this recipe! The smoked paprika is what gives these potatoes a golden color. If you haven’t tried smoked paprika ...

BLUEBERRY CREAM CHEESE SWIRLY BREAD

Image
BLUEBERRY CREAM CHEESE SWIRLY BREAD …. oh my! Serious soft, sticky, creamy yummy! Happy baking! Blueberry Cream Cheese Swirly Bread. Can you guess what is in the ingredients? For this easy recipe, I’ve used regular ingredients which you will be able to get at your local supermarkets. I’ve also used frozen blueberries because they simply aren’t readily available all year round and this blueberry cream cheese swirly bread recipe is so very popular over Thanksgiving and Christmas, yep, when blueberries aren’t in season, then frozen blueberries are just perfect for this! In fact, using frozen blueberries is preferable in this recipe, so I do suggest if you have got fresh blueberries, be sure to freeze them for a couple of hours before using. This is because the blueberries do have a tendency to burst in the heat of the oven so starting off with them frozen just helps keep their shape once their baking in the oven. This is a delicious bundle of soft, light, sweet rolls packed with blueberr...
